San Francisco-New York-Style Porchetta is the passion project of Brian Lease, a.k.a. the Fisherman.
Porchetta is a savory, tender, and moist boneless pork roast of Italian culinary tradition. The pork is stuffed with garlic, rosemary, wild fennel pollen, cracked pepper, and Sicilian sea salt and slow roasted.
These delicious sandwiches are served on “Crocollini”, rolls created especially for Fisherman by San Francisco’s very own Boudin Bakery in Fisherman’s Warf. The juicy pork loin is from 4505 Meats in the Mission District which offers uses only cuts of meat from responsibly and sustainably raised livestock, sourced from farms in Northern California.
After years of serving up porchetta in New York, Fisherman brings his special recipe to San Francisco, where you can enjoy a delectable sandwich while he plays tiki exotic sounds on his vibraphone.
